How to fill in pdf and send to someone else to sign

When I pull up a pdf application to send to a client, I can then click Fill & Sign on the right side. Adobe then offers two choices: Fill in the blanks on the doc myself, OR send to someone for a signature.

I need to do BOTH: fill in an app with a client on the phone, AND then send them the completed app for them to sign and send back to me.

I can't seem to figure out how to make the software let me do both functions. So, at this point, the app is really Fill OR Sign. 

Is there a fix?
