How to....parallel approvers but only one approval needed (Sharepoint - Sign integration)

I have a Sharepoint List/form that people fill in for leave applications.

It creates a Word document in Sharepoint Document Library folder and kicks off an Adobe Sign flow sending the Word document for 3 signatures, saving the completed PDF into a Sharepoint folder, notifying the payroll staff.
Took a while but I got there. Very happy with the result and possibilities....

One school I manage wants two people to be approvers - but only need one approval (can be either - not both). I can only see the 'both' option (i.e. order them 1,2. If I order them 1,1 I get an error saying 'No Hybrid'.

Wondering if there is a way to have boolean either/or Approvers?
