List of signature

I want to use adobe sign to make an attendance sheet for distance learning. I filled in the various emails of the registered persons and as well as the signature positions for each person on the pdf document. This document is for my personal use and I do not want participants to receive the document at the end of the signature. Is it possible that this document, once signed by everyone, will not be sent to everyone but only to me?

And I would like to know how many signatures we can put in a pdf document?
