Modifying pdf for signature

Would love advice!  I have a short term rental agreement that I need to constantly add renters names, rates etc to prior to sending for signature every few days.  Can I fill in a form field myself and NOT have the recipient change the fields I enter the data into when they are filling in their fields?  

Right now I'm having to open the document in Word and enter the info that I need to add such as name, rate, dates of stay etc...then save as pdf, then use Adobe sign for the clients to fill in and send for signature thru Adobe Sign.  It tends to be a lengthy process and wanting to know if there is an easier way?   My thought is to have a form and have me fill in some fields and have the customer fill in other fields...but somehow not allow them to edit or change the fields I have already filled in......   Any thoughts would be greatly appreciated!
