Notify always someone when a document is signed

Hello

i would like to ALWAYS notify an email address when a document is signed.

Should i put that email address in CC each time i send out a document to be signed? What is the best way to do so?

 

One more thing: in the CSV export of all the data filled out by the recipients, i would need to have also the sender information. How do i add that?
