recipient can't update field

Hi,

I am sending a doc with recipient's email on it.  I have the email field auto pop with recipient's email but it is NOT read only.  The field does auto pop with their correct email, but how can I get it so the recipient can change it or update it if he wants?  There is a salesforce integration.  ty
