Regarding Workflow Designer in Adobe Sign

I wanted to confirm that the UI technology used for making workflow boxes is HTML5, also I am not able to view the Workflows option in trial version of the product.

Is it not available in trial version?

Also, please share useful links to understand specifically about the workflow designer.

Please be informed Trial account is a Premium level service will all the features except integration.

You can refer to the below KB documents to create forms in the Adobe Sign environment: 

Create Form: Create forms

Field Type: Field types

Assign Roles: Assign roles to form fields

Field validation: Form field validations

Field appearance: Set field appearance

Or, you can use the Text Tag method to prepare the forms:

Use Text tag- Use Text Tags to create form fields
