Retrieving field values

Does Adobe Sign intentionally remove field objects after signing a document? Every signed document I download is stripped of their original fields, making it difficult to map what the signer has entered in each field to the original field names (since the latter are gone).

Is making an API call to download the associated CSV the only way to retrieve a signed document's field values?
