Send for Signature is changing Prefilled data

I have numerous pull down list fields with default values that are set " to allow user to enter custom text".  Whe ncustom text is entered during the Prefill stage and the document is saved and "Sent for Signature", none of the custom text is retained.  Instead the data is overwritten by the Default values.
