Sign with Acrobat?

I am routing some documents through Adobe Sign. I am unable to sign them in Adobe Sign, though - the signature field is greyed out and tells me "Sign with Acrobat", and it walks me through the workflow of doing so. The problem with this workflow is that all of the Form Fields get locked down as soon as I proceed with the Sign with Acrobat workflow - I do not want this, as I need to allow edits to certain form fields after I sign the document. Other documents that I receive for signature allow me to sign directly in Adobe Sign, so I am curious why this workflow is different? Is there any way to change this behavior? Ultimately, my goal is for the Form Fields to not be locked after my signature.
