Signed document with scratched out text

I just started using the Adobe Sign website and 2/3 documents I sent came back signed but the signature is the only thing readable on the pages. It's not displaying ANY of the text I had in it, it's just showing it scratched out (in the color of text I was using). 1 of the 3 came back displaying fine.

I'm afraid to send anything out until I know how to fix it because I can't ask them to sign the same thing over and over. HELP!
