Downloaded a bunch of stock pictures for photoshop and they are for illustrator, which I did not know. How can I use them in photoshop?  I downgraded my cloud subscription to only use photoshop as I never touched illustrator. Please advise, I have loads of them which I don't know how to use?

Unfortuneately most Illustrator assets need Illustrator. There are two possibilities. Either you use one of Nancy_OShea 's indicated converters (Google ist your best friend) or you take a one month license of Illustrator or you need to find a friend converting the assets.

You can open AI and PDF files in Photoshop, but you won't be able to easily customize or edit the result.

What file type (.extension) are the files you purchased?

If the files are native Illustrator files, you will find more than a few .AI to .PSD converters online.
