As @RALPH_L mentioned, underexposed shadows and burned out highlights. Always check your histogram.

Yes, you can...but AI doesn't always follow every instruction it's given. And even if it did, there's no guarantee you'd end up with a perfectly exposed result. You control shadows and highlights after the fact in Adobe Photoshop or whatever image editing program you happen to use. It's a simple fix in most cases.
