Is it allowed to use the word ‘AI’ in Adobe Stock titles and tags? For example, if I create generative AI icons or design AI-themed icons, can I include the word ‘AI’ in my titles and tags?

It is not prohibited, but neither is it necessary to do so because you've submitted your assets in the AI category and they are marked as AI by Adobe,

Ma’am, I am talking only about the tags and titles that I can use as titles for icons which are not generative AI icons — they were designed by me, not created using generative AI tools.

There are people and companies that avoid AI like the plague. You would be doing yourself a disservice by labeling non-AI images as AI.
