as Enterprise User (via WPP) I'm trying to enter the model training function to evaluate this possible solution for one of my clients. However, the link only shows me an explantory video, no actual interface to use this feature

You have to be assigned as a trainer of custom models by your Adobe administrator, as documented in: Assign users to Firefly custom models. Please ask your local Adobe administrator to follow the steps in that guide. If your enterprise plan does not include custom models, your local Adobe administrator will need to contact their Adobe account representative.
