Why are my courses showing a due date when I never set one?

I noticed when i logged into Prime through the App some of the courses are showing a due date and some show no deadline, why is this?
I have not set a due date to any of the courses yet some have one. What am I doing differently with the ones that show no deadline and the ones that have a due date?
How can I change these to no deadline?

Default instances do not have a deadline.

All subsequent instances have a deadline.

The deadline on instances can be edited but cannot be deleted and is typically related to scheduled courses which is the main reason for creating instances.
