Are you signed in with your Adobe ID when this happens?

Did you get the update for Android 10 that was pushed out for your device in January 2020?

Also, perform an update of  the Scan app if you haven't. An update was pushed out for this app also in January 2020.

The latest version of Adobe Scan  for Android should be  20.01.07

You can also try to clear Data and clear Cache in the app and check in Data Usae to "Allow app while Data Saver  on", "Allow background data usage" (to allow mobile data usage while it's running in the background).

Press and hold for a second the app icon. Select from the context menu "App info". Select "Storage"' to clear chaches.  Select "Mobile Data" to enable/disable the settings mentioned above.

Last, since this app do requires access to the Dcoument Cloud you may also want to try an reset your network's settings. Sometimes a quick "Enable Airplane Mode" and then disabling it resolves a few connectivity issues.
