App will not recognize text

I'm new to Adobe Scan and Acrobat Reader on iPad. I thought the point of OCR was to detect text so that it can be made editable in the PDF, but that doesn't happen when I use Adobe scan. The resulting document has one object that is all the text on a page, but I cannot select or modify particular lines of text. "Scan text" is turned on in settings and set to English. Am I missing something?
