Alguien que me pueda decir cómo vaciar mi aplicación, necesito eliminar todos los documentos!!

Hope you are doing well. Per the description, you want to delete all files from Adobe Scan.

To do so, you can log in to https://acrobat.adobe.com/link/documents/ in the My Scans folder. Click the three dots on the right of the folder name-> click delete.

Note: deleting the files will be permanent and cannot be restored.
