disable auto color

Hope you are doing well and thanks for reaching out. 

At this time, Adobe Scan doesn't offer an option to set Original Color as the default scan mode. However, you can easily change the color mode after scanning.

After capturing your document, tap the page thumbnail to open the edit screen, select Color from the bottom menu, choose Original Color, and, if you'd like the same setting applied throughout the document, enable Apply to all pages.
