how do I cahange the default email address on scans I email.

I hope you are doing well. Per the description, I understand that you want to change the email address of the scans you want to share.

 

It depends upon the workflow and how you use to share the scan. You may try the share a copy option which gives you the possible email applications from which you can share the file.
