By granting Adobe access to contacts on my iPhone does Adobe transfer any of my stored Contacts onto their servers or is adobe scan only writing to the contacts db, obviously Adobe has the new scanned contact information?

Sorry for the delay in response.
When you scan a business card and save to contact, it only adds the details to contact list on your device.
It does not transfer any of the contact stored on your device.
Only the scanned PDF of the business card will be saved on the Document Cloud.
