How do I get editable text from OCR scan

My first use. Wondering if I got the wrong product for my needs. I'm running on an iPhone. I took a photo of a printed text document for which I no longer have the source. I wanted to OCR scan it and copy the text into a new text document to modify and reprint. Not sure what other use the OCR  would be for. The scan produces a pdf, which does me no good. Should I be able to get editable text from this OCR scan? If so, how?
