How to change sign from Adobe scan app

Could you please confirm:

1. Whether you mean your saved signature or initials, or your account sign-in (such as the email or name shown in the app).

2. Whether you use Android or iPhone, and the Adobe Scan app version.

3. Where in the app you see it (for example, when you open a scan and select Fill & Sign).
