stop sending scaned doc to cloud

I think the use of the Document Cloud is mandatory to use Adobe scan. If you do not want that, I fear that you will need to look out for a different product.

Edit: You could try the option "Save originals to photos". That option may do what you want. If that saves JPEGs however, there is no advantage over the photo app.
