Where do they go?

Wondering if anyone can shed some light on this.   Once I scan my document are they just saved on my device?   If not what type of security is involved to ensure my documents aren't accessed.

    In other words, all files scanned will be saved to some servers that you don't know before saved into your device. It is a totally unsaved app.
