Change color of stroke effect as it 'cools'

Hello Friends!  I'm new to After Effects and I have been watching tutorials and playing with effects for a few days now.  There is one effect I'm trying to figure out and I'm not having much luck.  Think of welded metal, it's red hot (orange-yellow) immediately after being welded and then cools off to the color of the metal over time.  I'm trying to recreate this look using the Generate -> Stroke effect.  Unfortunately, I have not been able to figure out how.  The effect would be similar to how the particle effect changes color from birth to death.

If anyone has a tutorial on this or can get me pointed in the right direction it would be greatly appreciated!

I know this is late, but none of the above would actually work for you.

Changing the colour of Vegas over time will change the colour of the whole effect and the Write on colour change is like changing the colour of a brush as you paint, it wont change whats already been 'painted'.

Your best bet would be to use one of the particle effects, animate the emitter position to your desired path and set the lifetime of the particle to something like 10 seconds. Crank up the birth rate and make sure the particles have no velocity when they're born, Then set its birth colour to white/red and death colour to dark orange or something.

Add a glow on top of that and you're good to go!

Another option is to use the Write On effect. It has a temporal parameter for color that can change the stroke in the way you need. The only thing with this effect is that you need to animate the position of the brush, it is not like the stroke one that is based on masks.

Wrong effect. Use the Vegas effect, adjust its start, end and offset property. Animate the latter. Tweak the colors. done. Use multiple layers and effect instances for even more refined control.

Select your shape layer and press the U key twice. This will show you all of the modified properties of the layer including color. All you have to do is click on the stopwatch to start keyframes, move down the timeline and change the color. It will take a little bit of experimenting to get the transition you want.

The other option is to create a gray stroke then add the Hue/Saturation effect, change it to colorize and animate the hue.
