How can you have a full version of 2017 but only a trial of 2018?  A Creative Cloud subscription doesn't limit you to a single version, even if you pay for the single-app license.

I'm currently working out of a suite with Yosemite as the OS, and unfortunately, the latest version of Adobe CC is only compatible with macOS version 10.11 or later, therefore I am stuck with 2017 (despite the need to open a 2018 project). I think there is valid concern from my producers and techies in updating the OS (aside from any hiccups, there may be a loss of all plugins, etc).

On my end, I think I just need to have a conversation with the production house un updating their systems.

Oh dear! You'll need to find a version of CC 2018 somehow. Take note that every version of AE allows you to save to a project file one version down. In fact AE 2018 allows you to save to two versions down.

Unfortunately, there is no way to open a newer AEP using an older version of AE. Having said that, if you had exported your AEP to the XML format, you can circumvent the limitation I just mentioned. However, there may be discrepancy between the XML and AEP due to limitations within the XML format. Unfortunately, I'm not familiar with what exactly these limitations are.
