How to control easing of liquify effect?

I applied the liquify effect to some text.

 

The problem is the effect starts off slow and ends super fast but I don't see where to change this?

You have a couple of options. One would be to pre-compose then run time remapping on the new nested comp (pre-comp) and edit the speed graph. That probably gives the most control with the least amount of fuss and you will not need to worry about things like blended frames.

 

The other option is to fiddle with the speed graph for Liquify. The only animatable property you have is Distortion percentage and that tends to act like animating scale. A nomral camera dolly looks a lot different than animating the scale. It behaves exactly the way you describe so you'll need to put a curve in the speed using the graph editor or the temporal interpolation options.
