after the update, the color palette is displayed as shown in the photo

is there any way to undo it like the previous version?

I agree with Rick. Go to After Effects Preferences > General > uncheck Use System Color Picker.

Check your Preferences. The option to Use System Color Picker is about in the middle of the General page. Your top screenshot is the Mac System Color Picker.
