No extrusion under Geometry options

If you have only Curvature and bevel probably it is because you are not using a text layer or a shape layer. Any other type of layer will not show the extrude parameter, not even precomps.

Could you share a screenshot of the Timeline with the Geometry options revealed? Also, what's the exact version of After Effects you're using: https://community.adobe.com/t5/after-effects/faq-how-to-find-the-exact-version-of-after-effects-you-re-using/td-p/9972137
