Why do my graphs look so different?

I'm having a very difficult time with the graphs. They always seem to form stairs, and I don't understand why, they are impossible to edit that way. Im following a twixtor tutorial, and I've done exactly as the person in the video, but as you can see the graphs look completely different. (Pics are before I or the other person touched them). Please help?

Maybe this tutorial of mine will help. It's on position, but the workflow is the same. You want to be editing the Speed Graph.
