Question on this rigging tutorial

Hi, I'm just getting started on animating in adobe and I was checking out this tutorial on puppet rigging https://youtu.be/5akCGlkHmDI?si=1GEtg3f2I0YnB6y6 . I got a little confused in the eye process section, at the 7:45 - 8:47 mark. I don't even know how to write my question cause I'm still having trouble processing what even just happened. I know he did whatever that was to make the sclera into a mask for the iris, but I don't know what exactly he did or why he did it. I don't just want to just follow along with what he did, I want to understand that whole process.

Also, what could have been done instead of this if he didn't forget to paint the sclera inside the eyelash beforehand?
