Since down loading Bridge 2023 today, it does not open with one click from the dock on my Mac, previous versions always did. Ps always does even now with 2023.
Its anoying, so can a quick tweak sort it please.

The issue is that this is a whole new build and did not replace the previous build. As such, the build you see in your Dock is linked to the previous build, which apparently was deleted when you updated (there is a checkbox option for this).
By starting the new Bridge from the Applications folder, you are starting the new version. Then as stated, just move the new Bridge icon to a choice spot on your Dock, and it will remain. Subsequent clicks with always start up this build.
