The metadata is stored in the image, so if you email an image, All tags and metadata are preserved in your e-mailed file.

You can add metadata using the File Info dialog box in Bridge, please read here to know more: Learn about Extensible Metadata Platform (XMP) standard and working with metadata in Adobe Bridge
