Can you use open-ended questions where the student can provide their own ideas?

This would be for use in e-learning materials for elementary students who could each answer the question differently

    Sounds like you are thinking about having the students type in a text response..?

    Captivate does have short answer and fill-in-the-blank types of quiz questions.

    A drawback might be that you have to supply a "correct" response.

    You could circumvent that in a way so the students did not get an incorrect box.

    I must admit that as I read the question... my mind immediately jumped to Google Forms.

    I often use the scrolling text interaction for that purpose. It can have an associated variable, which will store the answer. Any case you need to take out the score, there is no validation possible. For a default question slide like Short Answer, you can change the type from graded to survey. In that case you don't need to indicate a correct answer at all. Personally I rarely will use the default type of Short answer question because it is so limited for a graded question (answer has to be exactly the same as the text indicated as correct answer.
