File Privacy for Students?

I have access to a creative cloud subscription from my school. We can download individual programs and creative cloud straight to our own computers at home. Is it possible to use a program without any info being sent to the school? I need to edit a file but do not want my school to be able to see the file. Iv been told as long as I turn off save to creative cloud ill be fine. Am I missing anything? Will not saving to creative cloud really leave no traces?
