I purchased a book in pdf format. The book opens in Adobe Digital Editions.

When I highlight text and copy, the PASTE command is shaded grey. How can I select text and paste?

Befor you text can insert you must copy the text. If the option copy gray out you have the problem that the eBooks have no permission to copy text or other things of the eBook. This is a decision of the ebook creater.

OK - it is clear that the very different copying policies is the due to the copyright holder = the author/publisher.

But it is very annoying to find out what the limitatations are after buying the book, so it should be part of the info about the book (just ast ISBN, date of publishing etc.)

I am relatively new to ebooks, but is there any way of knowing what the limitations are? Any way of paying for having the right to copy more from an ebook?

For those of us writing scientific articles the way the limitations on copy are formulated are ridiculous. If you do not copy the whole book, or many, many pages - what is the problem? That you can copy with intervals of several days is not adapted to the way researchers work with other scientific texts.
