Hello,

I recently just got access to a Creative Cloud account by my school and I was wondering if they can see all Creative Cloud apps I install to my computer?

It it is a school-provided account, this information may be available to them now or in the future. If it's your account and you purchased a regular license from them, probably not. But don't count on it.
