How do I install CS3 on my new iMac. I have the disks but it does not install, it just shows the disk content.  I have the serial numbers and have only installed it on my old Mac Mini years ago.

Your new iMac is probably running macOS Catalina which has zero support for 32 bit software.

 

CS3 is 32 bit software so there is no way to install or run CS3 on Catalina.

 

Your only solution is to subscribe to an Adobe Cloud plan.

You don't.  Creative Suite 1 - 3 are officially dead and gone.   And CS4 - 6 are on life support. Even if you could install CS3, which is unlikely, you can't activate the software beyond its  trial period.   Time to get modern software or a paid Creative Cloud Plan.
