We're going to have a hurricane. Which means we won't have access to wifi for probably a week. I've noticed if I'm not tethered online, the adobe programs simply won't open. What can I do beforehand so this doesn't happen?

open the apps (while you have a connection) and leave them open/minimized.  if/when you lose connectivitiy, you should be able to use them as long as it's been less than 30 (paid monthly subscription) - 100 (paid annually subscription) days.
