How would you guys do a massive installation of Adobe Illustrator, InDesign and Photoshop for the latest version on Windows 10 computers?

Also, need to remove old version after installation.

In the Creative Cloud Desktop App, look to your left (in the apps tab) click "Updates", from there on the upper right corner of your app there is an "Update All" button. When you click this it gives you a prompt to remove old versions. You simply check that box, and it will update all of your apps and remove old versions as well.

Or, do you mean you have an Enterprise license and want to push out a deployment for your enterprise registered users?

I do not have enterprise, but I do have lots of clients using Adobe 2018, 2019 with the proper subscription and I would like to create a package and find out an easy way to deploy on their system, without doing the same manual work over and over.

Let me move this to the Get Started forum for you, where you are more likely to receive an answer to your question.

Note that the Community Help forum is for help in how to use the Adobe Communities. Product questions should be posted in the associated product community. Get Started is for installation and subscription information.

That being said, what do you mean by "massive installation"? Are you subscribed to those programs and need to install them on your computer? If so, you should have gotten an email with links that will let you download and install Creative Cloud Desktop, which is the application that manages your subscribed products. Once it is installed on your computer, you can install your applications.
