Can you copy a layout in illustrator and delete text content to use your own?

Ah. A jpg file is flat—no layers. You will not be able to edit the text in a jpg in any application. If you want to edit the .jpg, you can open it in Photoshop, and add new text on top of the image, but to address your original question—no, you can't edit the text in that file format.

That depends on what type of file you're working with and whether text is editable or not.

If it's an Adobe Illustrator (.ai) file, chances are you can edit the text.

Ok...how can I tell?  It was an indesign and illustrator layout...I pasted it into illustrator...

So you are in Illustrator now? Select the Type tool (the T) and click on the type. Can you edit it?

If not, open the file in InDesign and try the same exact steps.
