Will I be able to run Adobe Acrobat Pro 11 once I install OS Catalina on my iMac ? I tried to Chat with someone at Adobe but never received a response after the computer automated system told me that I was being transferred to a real person.

Only Acrobat DC and Acrobat 2017 will be supported in future updates.
The support page is open to the public.

Why don't my Adobe apps work in macOS Catalina?

The latest Acrobat Pro DC is getting regular updates/upgrades.  But legacy products are not.  So you don't want to go anywhere near Catalina until you have fully committed to newer 64-bit apps on everything including add-ons and helper apps.

Absolutely, definitely not. Apple made quite sure your old apps couldn't run. You will need to buy the latest version of everything - but no Adobe apps are yet completely ready.
