Trying to change user profile of employee who left the company

I have a three-seat license of Creative Cloud. Two admins and a regular user. One of the admins left the company over two months ago, but her profile is still listed in Adobe Admin Console.

 

I have her admin login, and would like to make myself the admin. I was able to change her name in the profile to match my name, but I can't change her email address. I deleted myself as a user, but when I try to change her email to mine, it says mine is still being used.

 

Can anyone tell me the best way to remove her as admin and replace her with my profile information?
