How do I export/save a sticker in order to print it as a cut out sticker ?

I would like to get a standard cut out sticker as in the image. This would be the first time I design them and I'm not sure about how export/save them to get what I need. I guess CMYK is the right way (since I seen tutorials where they work in RGB I'm not sure about)

The set up of such a sticker depends entirely upon the printer and their requirements.

The label you show would usually be set up in two spot colors, but if it is going to a digital press, that might not be the case.

You will need a spot color for the diecut as well - it should be set to overprint, but your printer may have a specific name for that color if they are using a digitally-run cutter.

Bottom line, only your printer can give you correct information on how your files should be set up.

First thing: contact the printing service and ask them what kind of file exactly they need from you. If you don't understand what they say, ask them. You need to understand it. They want your business, so they should be eager to tell you. Only they can tell you what they need.
