Text to Vector not found in Illustrator 2025, version 29.5.1

I am following a Udemy class about the last updates of Illustrator concerning AI and I cannot find the window for Text to Vector. I am trying with the Properties pannel, but also, there are only 3 itens listed, SCENE, SUBJECT and ICON, while I can see on Udemy's video, on a older version, that there's also a PATTERN choice... Where are these features?
