The gamuths of different color modes are different. Your image is probably in RGB and  some colors cannot be oroduced in CMYK process colors.

  1. What color mode and profile has you image?
  2. What output profile did you  choose?

You might benefit by toggling on Proof Colors under the View menu. If you have an appropriate CMYK profile set in Proof Setup, this will show you what will happen to your bright out of gamut colors before you go to press so you don't get surprised by the results.

Hi @Rupert4956 , You can set your Transparency Blend Mode to RGB and turn off Overprint Preview/Proof Color, but keep in mind that if the book will be printed, the RGB preview might be misleading-- not all RGB color (i.e saturated pink) is printable
