How do I get email addresses to link within InDesign just as hyperlinks are able to link URLs?

It will depend on some degree to what format you export the document to. What you create in InDesign is just one step; proper export to a format that supports hyperlinks (to email, especially), or more specifically, to a format whose reader supports such links, is much more important.

 

If you plan to export to PDF, creating the links is fairly straightforward. Highlight your link text, click Create a New Hyperlink in the Hyperlink pane main menu (under the three-line icon), set Link To to Email, and enter a mail-formatted link:

 

 

Again, this link will only work if the InDesign doc is exported to a format that/whose reader supports email links, such as PDF or EPUB.

 

As @Dave Creamer of IDEAS notes, links are automatically created by some readers/platforms, even if you don't want them. 🙂

Thank you! I'm just getting back to InDesign after a few years and I knew
it was a simple task. But I missed the pull-down menu at the top of the
dialogue box.

Are you making a PDF? Most PDF viewers, especially Acrobat ones, automatically hyperlink anything that looks like an email or web address.
