Is it possible to search for something with Grep and for only one of the characters to have a specific format?

Yes, search for the character you want to format along with Positive Lookbehinds and/or Positive Lookaheads to see other characters, but not format them. These are found under the Match section of GREP commands.

You can set it up without search, only with a GREP style inside the paragraph style.
